Angry Orchard Hard Cider

Cincinnati , OH

Angry Orchard uses bittersweet apples from France, and culinary apples from Italy. Once the apples have been picked from the orchards, they are pressed and mashed to capture the juice. At that point white wine yeast is added to the juice, which then goes through a lengthy fermentation process. During this time the cider is wood aged, a process that adds subtle spice and vanilla notes to the juice. When fermentation is complete, the cider is then matured for a period of time before it leaves the cidery.

Ballast Point Brewing

San Diego , CA

In 1996 Jack White and Yuseff started Ballast Point Brewing. Naming the beers was easy—Yuseff loves fishing, and he and Jack both love beer. So they brought the two together and started naming their beers after fish. Today, the beer labels still have fish on them as an homage to the brewery’s origins and as a reminder to always do what you love. Almost 15 years after its inception, Ballast Point Brewing’s dedicated team of craftsmen is still innovating, trying new methods and ingredients, and working constantly to increase capacity to try to meet demand.

We thank our hops every day that the English loved their bitters—or else the IPA style may not have been born to help the beer survive the journey from Cape Hope to India back in the 18th century.

Malts: American and German

Hops: German

Glassware: Stange

Food Pairing: Cuisine (German) General (Salad) Meat (Pork, Fish, Shellfish)

Taste Profile: There’s no wonder why our Pale Ale is so popular—it is skillfully crafted in the style of the Kolsch beers of Cologne, Germany. We’ve chosen German hops for aroma, and rounded out the recipe with a blend of American and German malts. While it is very much like a Pilsner, our Pale Ale is fermented at ale temperatures, giving it a subdued fruitiness—a perfect compliment to the crispness of the wheat and maltiness of the Munich malt. If you like a lighter brew but also like the complexity of craft beers, then our Pale Ale is for you.

Taste Profile: Brooklyn Lager is amber-gold in color and displays a firm malt center supported by a refreshing bitterness and floral hop aroma. Caramel malts show in the finish. The aromatic qualities of the beer are enhanced by “dry-hopping”, the centuries-old practice of steeping the beer with fresh hops as it undergoes a long, cold maturation. The result is a wonderfully flavorful beer, smooth, refreshing and very versatile with food. Dry-hopping is largely a British technique, which we’ve used in a Viennese-style beer to create an American original.

ABV:4.5%

Style: Session IPA

Malts:

Hops:

Glassware: Stone Pint Glass

Food Pairing: Chips & Salsa, Cajun Shrimp, Jerk Chicken, Grilled Salmon, Cheddar Cheese Soup, Carrot Cake

Taste Profile: This beer employed the "hop bursting" technique, which in essence is a hopping method where all or most of the bitterness in the beer comes from late hop additions in the brewhouse, like at the end of boil and in the whirlpool, instead of the more traditional approach where most of the hop bitterness comes from earlier additions at the start of the kettle boil. The result is a beautifully aromatic beer with substantial, but somewhat mellow, bitterness. The hop bursting also enhances the flavor retention of the hops, and combined with the dry hop, creates a very intense and complex hop flavor.
